Quick Chicken & Mushroom Omelet

1 oz cooked chicken, diced
1/2 cup sliced mushrooms

3 eggs, beaten

Salt & pepper, to taste

Preheat broiler
Melt butter in a pan over medium-high heat.
Add mushrooms and chicken and sauté 3 minutes.
Pour eggs in pan and cook 1 minute on stove.
Put pan under broiler until top is cooked and slightly browned.
Remove from oven without burning yourself and slide onto plate.
Fold in half and enjoy.
