Quick Mussels

Dinner for Dad

I’m still using my primal influence on my father while I’m here. I’m cooking things he likes to get at restaurants in his home to show him how easy and cheap it can be. It’s healthier too.

For this one, all you need is:

1/2 stick of butter
1 large onion, sliced
2 cloves garlic, finely chopped
Palm full of parsley
1 tsp(or more) crushed red pepper
1 cup white wine
1 lb of Mussels, scrubbed and debearded
Salt and pepper to taste

In a large saucepan, melt butter over medium-high heat. Add onions, garlic, parsley and red pepper. SautĂ© until onions are translucent but don’t allow the garlic to burn.

Pour in the wine and turn heat to high. Bring to a boil and add mussels. Cover for 3-4 minutes. Turn heat to medium low and simmer 2-3 more minutes and serve in bowls with broth.

Dad and I just destroyed 2 pounds of these.

    Looks/sounds yummy…… however, I am going to have to google how to debeard a mussel…….

      You could also buy the frozen ones at Aldi for $3.99 but get the ones that say “in natural juices” and make your own sauce.
